Mini Meat Loaves (with hidden veggies)

If you struggle to get kids (or spouses) to eat enough vegetables, try this recipe! The amount of vegetables added is flexible, based on what you have and what you like! I use a food processor to finely chop all my veggies I hide in meatloaf.

 

Ingredients

Meatloaf Mixture

  • 1 lb ground beef

  • 1 lb mushrooms, finely chopped

  • ½ onion, finely chopped

  • 3 big handfuls of spinach (or any other vegetable you have – squash or bell pepper work well) – finely chopped

  • 1 egg

  • ¼ cup milk

  • 3 tsp minced garlic

  • ¼ cup bread crumbs

  • 1 tsp dried parsley + 1 tsp dried basil (can substitute with 1 Tbsp Italian seasoning)

  • Salt and pepper to taste

Vegetables

  • Use whatever vegetables you have available. Today I used 2 ears of corn, 1 white potato and 1 sweet potato Olive oil Salt and pepper Garlic salt, paprika

Ketchup Topping

  • 1/3 cup ketchup

  • 2 Tbsp yellow mustard

  • 2 Tbsp brown sugar


Directions

1. Preheat oven to 425 degrees

2. In a large bowl mix the meatloaf mixture ingredients together

3. Mix vegetables with oil and spices together

4. Form into patties like hamburger patties – 4-6 depending on the size you like

5. Either oil or line sheet pan with parchment paper

6. Place the meatloaf patties in the center of the pan

7. Arrange vegetables around the meatloaves

8. Bake for 25 minutes at 425 degrees

9. While baking, mix the ketchup topping ingredients together in a small bowl

10. When baking time is complete, brush the ketchup topping evenly on top of the meatloaf patties. Bake another 15 – 25 minutes.
